Hold down R1 or RB for XBox. Use the turbo button while dribbling to do quick moves and accelerate your player more than he would normally accelerate after a touch. Just remember that in real football quick dribbles particularly with fast players leave the dribbler out of control after they take a touch and it's the same on FIFA 23.
